Hand Made Flour Tortilla Recipe

This is a traditional recipe for hand made flour tortillas. These are traditionally used for burritos, and to accompany a meal, in place of bread.     

- 3/4 cup shortening
- 3/4 cup hot water
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons salt

Combine flour, salt & baking powder. Cut in the shortening till the mixture is crumbly, either by hand or with a pastry cutter. You can add just one or two more tablespoons of shortening if it seems too “floury” till it is crumbly. Slowly add the hot water to the mixture, 3/4 cup or just enough to make the ingredients look moist.

Grilled Chicken Fajitas – Cyrus O’Leary Style

Ingredients:

4 cups Onion -I use Bermuda or Walla Walla Sweet onions 

4 Green Peppers-Omit this ingredient for those who have fibromyalgia

1 Boneless, skinless Chicken Breast cut in thin slices cross-grain to the muscle fibers

3/4 cup Nellie and Joe’s Key West Lime Juice (it’s sulfite-free)

1 Tbls. Wrights Concentrated All Natural Hickory Liquid Smoke Seasoning

1 1/2 cups Christian Brothers Dry Sherry

2 Tea. Frank’s Red Hot Sauce

Mix all together and put into a Zip-Lock Baggie to marinade overnight. Flip the bag over occasionally.
